The Village Shoppe prides itself on transparency and is proud to work with local farms to provide exceptional products. Unlike many traditional butcher shops or departments, The Village Butcher is a whole animal butchery, supporting sustainable farming and decreasing waste, while also providing customers with the freshest, highest quality meat possible. Once the meat is cut, all remaining trim and bones is sent to our sister company, Gourmet by the Bay, where GBTB Chefs make stocks, pates, sauces, and scrapple to sell in the case. Head Butcher, Adam Roe, dry ages special primal cuts for 15-45 days and will portion steaks however the customer prefers. Together, Adam and the GBTB Chefs prepare a variety of sausages, hot dogs, and specialty products available only at The Village Shoppe and a select few other retail establishments.
